It would be trivially easy to replace those jobs with robots and AI, even with our current levels of technology. And it will inevitably eventually happen.
There are two reasons why those jobs haven't already been replaced, and neither of them is because it isn't feasible technologically (it is).
1. Most current laws and regulations related to those jobs assume that the worker is a human being and not a robot. Many laws need to be re-written to deal with licensing, training, insurance, liability, workers rights, OSHA, and 9000 other things. There are many groups working every single day to rewrite these jobs so that human workers can be replaced by robots. When it happens for a particular field, the human workers in that field will quickly be replaced.
2. It's still cheaper to hire some dumb beaner like you to work for very little money to do most manual labor trade type jobs instead of buying a robot. It's already very possible to build robots who can weld or do construction work or pick fruit or drive a truck better than even the best humans can do it. But it's still possible to find a human who will do an acceptable job for less than the robot would cost. This is also changing very rapidly with technological development.
